Cha Kroeung Sach Moan

Cha Kroeung Sach Moan is a Cambodian chicken stir-fry built around kroeung, the aromatic paste that gives the dish its fragrance and colour. The chicken is cooked quickly with the paste, then finished with herbs and served hot with steamed rice.

In documented versions, the kroeung combines lemongrass, galangal, fresh turmeric and makrut lime leaves with garlic and shallot. These aromatics are pounded or processed into a paste before cooking. This is a yellow kroeung: its fresh turmeric lends a warm golden colour, while lemongrass and lime leaf supply the bright citrus aroma.

The cooking is deliberately fast. The paste is fried first to soften its raw edge, then chicken is cooked until done and coated in the aromatics. Fish sauce or prahok can provide savoury depth; cooks balance and finish the stir-fry in different ways. Hot or holy basil is commonly folded in at the end, when its perfume remains vivid.

There is no single fixed vegetable list. Onion, chilli, eggplant and roasted peanuts appear in published versions, but each is a cook's choice rather than a defining requirement. The name is also written in several Latin transliterations, including Cha Kreung Satch Moan and Chha Kroeung Sach Moan. A recipe should identify its own kroeung, seasoning and accompaniments clearly rather than treating one version as universal.
